How to make French pancakes !

French pancakes are called crêpes. It's very easy and inexpensive to make. Without sugar you can eat it as a meal (lunch or dinner) and with sugar, as breakfast or desert.

As a meal or as desert, you can fill it with just about anything. You can dice ham, chicken, chesse shrimps, corned beef, suya, mashed titus fish, etc., and fry with tomatoes, green red or and yellow pepper, onions etc. or you can simply fill them in the pancakes with cheese or mayonnaise. Just be creative.

As breakfast or desert, you can sprinkle sugar on it or just roll it up in jam, honey, nutella, whipped cream or fold it up using fruits such as strawberries, peaches, apples, bananas etc.

Recipe for 15 pancakes :
  • 250g flour (don't forget to sift it)
  • 50g butter
  • 1/2 liter of milk
  • 4 eggs
  • 4 table spoons of sugar (if you want to eat it as desert)
  • A pinch of salt
  • Pure vanilla extract / Rhum (if you want to eat it as desert)
Put all the ingredients in a mixing bowl except the butter. Using an electric or manual whisk, mix until you get a smooth paste.
Melt the butter and stir into the batter (don't be surprised that it's watery).

Cover the batter and let it rest for about 30 mins to 1 hour before using, if possible (at room temperature or you can put it in the refrigerator).

Oil the frying pan and heat over medium high heat (use a non-stick pan if possible)
Scoop the batter onto the pan, swirl it to spread batter as thinly as possible so you don't end up with thick pancakes. Brown both sides (using a spartula to flip the pancake).

Repeat with the rest of the batter (don't forget to oil the pan each time).

Serve hot as a meal or cold as a desert.
